Herbed Couscous

Ingredients
- 1 ½ cups dried couscous
- 1 ½ cups water
- 1 cup of chopped mixed fresh herbs (mint, parsley and chives)
- 1 lemon, juiced
- 2 tablespoons olive oil
- Salt and pepper
Instructions
- Combine the couscous and water in a medium pot and cook according to the package directions. Once cooked, let sit for 10 minutes and then fluff with a fork. Toss with all of the herbs, lemon juice, olive oil, salt and pepper. Serve alongside the rest of the meal
