Pasta Gremolata

Pasta Gremolata

Yield: Serves 4 to 6

Ingredients
  • ½ cup minced parsley
  • 6 cloves garlic, minced
  • Coarsely grated zest of 2 lemons, plus the juice of 1 lemon
  • 1/4 cup extra-virgin olive oil
  • Kosher salt and freshly ground pepper, to taste
  • 1 pound pasta

Instructions
  1. In a bowl combine the parsley, garlic, lemon zest and lemon juice. Stir to combine. Season with salt, pepper and olive oil. (alternatively you can make this in a blender if you prefer)
  2. Cook the pasta until al dente. Drain and set aside.
  3. In a large bowl, toss the gremolata with the pasta until well coated. Serve immediately.
